Double Egg Masala

Ingredients
  

  • 2 nos Poultry eggs
  • 1 Cup Onion finely chopped
  • 1/4 Cup Green chillies chopped
  • Ginger garlic Paste - 1 tsp
  • 1 tsp Garam masala powder
  • 1/2 cup Tomatoes chopped
  • 150 ml Refined oil
  • Salt As reqd

Instructions
 

  • Add oil to a shallow bottomed pan and heat. Add the onion pieces and fry till they turn into brown.
  • Add the tomato pieces, green chilly pieces, ginger garlic paste and salt. Fry until oil separates and the tomato pieces become smooth. Add the garam masala powder and mix well.
  • Now break the eggs one after another and spread the albumen and yolk(intact like bulls`eye) of both eggs side by side over the above preparation. Allow to simmer on low flame.
  • After the contents solidify, turn the egg portion upside down. Allow to simmer for about a couple of minutes.
  • Serve hot with vegetable salad.
