Oats upma with vegetables

Ingredients
  

  • 2 cups Oats
  • 1 no Onion
  • 3-4 nos Green Chilies Cut into small pices
  • 1 piece Ginger
  • 2 nos Red chilies Kollamulaku
  • 1/2 tsp Mustard seed
  • Curry leaves Few
  • Salt As reqd
  • 2 tsp Coconut oil
  • 15 no Beans cut into small pieces
  • 3 nos Carrot cut into small pieces
  • 2 nos Tomato cut into small pieces
  • Peas A handful

Instructions
 

  • Heat oil in a pan.
  • Add enough water for boiling oats and let the water boil.
  • Add some salt to the water and add the oats. Stir it continuously until cooked (do not add more water, let all the water to evaporate). Keep it aside.
  • Heat oil in another pan, splutter mustard seeds, add whole red chilies, onion, ginger, green chillies and curry leaves to it.
  • Add beans, carrot, peas and required salt, sautT it for 3-4 minutes.
  • Add the above prepared oats to the vegitable mix and stir it continuously, then add tomatoes.
  • Serve hot.
