Egg Bajji

Egg Bajji is an all time favorite snack in Indian Cuisine very much enjoyed over a cup of hot tea. This is a quick and simple snack to prepare requiring locally available ingredients. Egg Bajji is prepared by covering boiled egg halves with a spiced gram flour mixture and deep frying in hot oil. Egg Bajjis, also termed Egg Pakoras, are fried to a crispy golden brown color. Fried curry leaves can be topped over these bajjis and enjoyed. The awesome snack is a favorite with kids and youngsters. These bajjis can be served as starter or evening snack with tomato sauce or chutney. If you have boiled eggs in store, then the snack requires just a few minutes for preparation. Make sure that the gram flour batter is not watery. Eggs are rich in protein and other vital nutrients required for body. Ingredients
  

  • 8 nos Eggs boiled
  • 1 cup Gram flour Kadala mavu
  • 2 tbsp Corn flour
  • 2 tsp Red chilly powder
  • 1 tsp Ginger garlic paste
  • 1 tsp Green chilly paste
  • Refined oil As reqd
  • Salt As reqd
  • 1 cup Curry leaves
  • Water As reqd

Instructions
 

  • For preparing egg bajji, take the boiled eggs and remove the shell. Cut each egg into two halves.
  • Take a bowl and stir in all the ingredients: gram flour, corn flour, red chilly powder, ginger-garlic paste and green chilly paste. Prepare a dough using water. Make sure that the batter is not watery.
  • Divide the dough into 16 balls. Add the egg halves into each dough ball and allow to settle for a while.
  • Meanwhile heat oil in a deep bottomed pan. Add the egg pieces covered with adequate dough, to the oil, one by one and deep fry to a golden brown color in medium flame. Remove the bajjies from the oil.
  • In the same oil, fry curry leaves.
  • Serve the egg bajjies into a plate and top them with fried curry leaves.
  • Egg bajji is ready. Serve hot with ketchup.
