For preparing onion sambar - brahmin special, first wash tuvar dal and boil it with 3 cups of water and turmeric powder. Pressure cooker may be used. Fry coriander seeds(dhania), chana dal, fenugreek, and red chilly in coconut oil.
Stir in grated coconut and fry again. Grind the mixture with sufficient water. Keep aside.
Soak tamarind in water for a few minutes(till it gets soaked completely). Squeeze the tamarind and pour this water into the vessel in which sambar is going to be made.
Fry onion in ghee and put it into the vessel containing the tamarind water and then boil it by adding salt and turmeric.
Add previously boiled dal and boil.
Now add the ground coconut mixture and cook again for a few minutes.
Fry mustard seeds in coconut oil and pour into the mixture.
Add curry leaves and coriander leaves for better flavor. Onion sambar - brahmin special, is ready.
