Russian Salad

Nutritious salad which is good for even diabetics

Ingredients
  

Veggies to be steamed/boiled:

  • 1 cup Carrot peeled and diced
  • 1 cup French beans cut into half inch pieces
  • 1/2 cup Fresh green peas
  • 1/2 cup Potato diced

Rest of the ingredients:

  • 1/2 cup Apple diced
  • 1/2 cup Pineapple diced
  • 1/2 cup Parsley leaves roughly chopped
  • 2 Boiled egg whites quartered
  • Low fat mayonnaise - 1 cup
  • 1/2 cup Low fat fresh cream optional
  • 1/2 tsp Pepper powder
  • Salt As reqd

Instructions
 

  • Steam all the veggies. :- Steam either in a microwave or in a pressure cooker on idli plates(usually the veggies are boiled for Russian salad, but its healthier to steam because it locks the nutrients in the veggies).
  • In a wide bowl, take the mayonnaise, salt and pepper. Beat them nicely.
  • To this add the steamed veggies, fruits, parsley and egg whites and mix them thoroughly.
  • Refrigerate for half hour and then serve.
