Char-grilled Vegetables

Ingredients
  

  • 1/4 cup Olive oil extra virgin
  • 1 no Eggplant sliced lengthwise, medium
  • 1 clove Garlic crushed
  • 2 no Zucchini sliced lengthwise, large
  • 1 no Red pepper cut into quarters
  • 2 no Tomatoes sliced, medium
  • Black pepper As reqd, freshly ground

Instructions
 

  • Preheat the barbecue to medium level.
  • Place crushed garlic and olive oil in a bowl and whisk to combine.
  • Brush the zucchini, eggplant, tomato slices and red pepper with the oil mixture.
  • Place the eggplant, zucchini and sliced red pepper in an oiled barbeque and cook for about 5 minutes.
  • Add the tomato slices to the eggplant mixture in the barbecue and cook longer for 3 minutes.
  • Char-grilled vegetables are ready and season with black pepper.
