Char-grilled Vegetables
A very nutritious recipe and apt as a diabetic delight.

- 1/4 cup Olive oil extra virgin
- 1 no Eggplant sliced lengthwise, medium
- 1 clove Garlic crushed
- 2 no Zucchini sliced lengthwise, large
- 1 no Red pepper cut into quarters
- 2 no Tomatoes sliced, medium
- Black pepper As reqd, freshly ground
Preheat the barbecue to medium level.
Place crushed garlic and olive oil in a bowl and whisk to combine.
Brush the zucchini, eggplant, tomato slices and red pepper with the oil mixture.
Place the eggplant, zucchini and sliced red pepper in an oiled barbeque and cook for about 5 minutes.
Add the tomato slices to the eggplant mixture in the barbecue and cook longer for 3 minutes.
Char-grilled vegetables are ready and season with black pepper.
