Kovakka Fry | Tindora Fry

Kovakka Fry is a traditional styled delicious fry dish, very popular in Kerala. Kovakka or Tindora is a vegetable locally available and widely available in Kerala. Kovakka Fry is a spicy fried dish that goes well with hot rice. Addition of thinly sliced coconut pieces makes the Tindora Fry unique and special. Tindora Fry is a healthy nutritious dish full of vital nutrients required for body. This is one of the easiest dishes that can be prepared at home with readily available ingredients. Ingredients
  

  • 3 cups Tindora/Ivy Gourd Kovakka
  • 1/4 cup Shallots chopped, Kunjulli
  • 1 tsp Red pepper crushed
  • 2 cloves garlic crushed
  • 9-10 Coconut pieces thinly sliced
  • 1 tbsp/as Oil
  • 1/4 tsp Mustard seeds
  • 1/4 tsp Turmeric powder

Instructions
 

  • For preparing the healthy dish, first wash kovakka and drain. Cut off the stem and slice into long pieces. Ripe ones should be discarded.
  • Heat oil and splutter mustard seeds. Add chopped shallots, crushed red pepper, garlic and the coconut pieces.
  • Saute well until the shallots are golden brown. Add turmeric powder.
  • Stir and add the kovakka/tindora slices. Add required salt and cook in medium flame until done.
  • Do not add water and let any remaining water dry completely.
  • Your Tindora fry is ready and serve hot with rice.
