Vietnamese Chicken Salad
Chicken Strips with Cabbage, Carrot and Peanuts in Sauces

- 2 nos Chicken breasts skinless, cooked and roughly shredded
- 1 cup Chinese cabbage shredded
- 1 mo Carrot cut into thin strips
- 1/2 cup Peanuts Roasted salted
- For the sauce
- 1/4 cup Mint leaves finely chopped
- 2 tbsp Lemon juice
- 2 tbsp Fish sauce
- 1 tsp Sugar
- 1 tsp Ginger minced
- 1 tsp Garlic finely chopped
- 1 no Chilies finely chopped
- 1/2 piece Red onion finely sliced
Combine all the ingredients for the sauce (lime juice, fish sauce, sugar, ginger, chilly, garlic and onion) in a bowl.
In a deep bowl mix the Chinese cabbage, mint, carrots and shredded chicken.
Pour the dressing over the salad and toss well until the ingredients are well combined.
