Soak cinnamon sticks,cloves,bay leaves and cardomom in water for half an hour.
Heat an open pan, add ghee and fry soaked cinnamon/bay leaves/cloves and cardomom.
When it starts to crackle, add ginger-garlic paste and fry for 1 minute.
Add shajeera, fennel seeds and continue frying.
Add mint leaves,mixed vegetables, fry for another minute and switch off the flame.
Soak basmati rice in water for half an hour, drain off water and transfer to a greased pan.
Transfer the fried vegetable mixture to this pan, add 2 cups water for 1 cup rice.
Add required amount salt and cook on medium flame till all the water is absorbed.
:-Keep stirring in between to avoid rice from sticking to bottom of the pan.
Transfer cooked vegetable rice to an open tray and garnish with fried raisins/cashew nuts and coriander leaves before serving.

10)Transfer rice and vegetable mixture to greased foil tray or metal tray, cover with aluminium foil and bake at 400F for 1 hour
