Pumpkin(Mathanga)Erissery

Ingredients
  

  • 2 cups Pumpkin cut into pieces, ripe
  • 1 tsp Mustard seeds
  • 1 tsp Coconut grated
  • 3 nos Red chillies
  • 1 tsp Urad dhal uzhunnu
  • 1 stem Curry leaves
  • 2 tsp Oil
  • Salt as reqd
  • 1/2 cup Water

For Grinding:

  • 1 cup Coconut grated
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Chilly powder
  • 1/4 tsp Jeerakam cumin seeds
  • 5 nos Garlic pods

Instructions
 

  • Cook pumpkin with water and salt.
  • Grind the ingredients into a coarse form.
  • Add the ground mixture in to the cooked pumpkin and mix well and cook for 5 minutes.
  • Heat oil in a pan and splutter mustard seeds followed by grinded Coconut,Uzhunnu,Red chillies,curry leaves.
  • Pour it into the cooked pumpkin curry and mix well.
  • :- Your Pumpkin Erissery is ready!! :- Serve the Pumpkin Erissery with Rice. :- Enjoy the Pumpkin Erissery!!!
