Soak noodles in warm water for 20 minutes till soft.
Drain well and keep aside.Use a scissor to snip it to make shorter length.
Heat oil in a wok, add onions, garlic, lemon grass and stir fry for 2- 3 minutes.
Add prawns and toss around continuously till the prawn meat changes color.
Add capsicum and cook for 30 seconds and stir in noodles.
Cover and steam for 1 minute until the noodles are heated through.
Add the fish sauce, soy sauce, lemon juice and toss well using two wooden spoons.
Add seasoning and pepper and transfer to a warm platter.
In the same pan spread oil and heat.
When sufficiently hot, add beaten eggs and swirl the pan.
Cook on both sides till golden, then remove and shred it to pieces.
:-Serve on top of noodles.
