Ingredients
  

  • 8 nos Brinjals Kathirikkai
  • 2 nos Onions sliced to small
  • 1 whole Garlic slit
  • 1/2 tsp Turmeric powder
  • 2 tbsp Coriander seeds
  • 4 nos Red chillies
  • 4 tbsp Oil
  • 1 tbsp Tamarind paste
  • 3 sprigs Coriander leaves finely chopped
  • Salt As reqd

Instructions
 

  • Wash brinjals and put two slits lengthwise.
  • :- Do not cut it into pieces.
  • Heat 4 tbsp of oil in a hard bottomed pan.
  • Fry the brinjals till it gets cooked completely.
  • Take brinjals from the fire, and keep it aside.
  • In the remaining oil, saute onions and garlic in the same pan.
  • Add coriander seeds, red chillies, turmeric powder and stir well till it gets brown in color.
  • Grind the mixture to a paste.
  • Add tamarind and water and salt to the paste and let it boil.
  • Add fried brinjals to boiling gravy and stir slowly for 5 - 10 mins.
  • Garnish Ennai Kathirikkai with coriander leaves.
  • :- Serve hot Ennai Kathirikkai with rice and chapathi.
