Wash brinjals and put two slits lengthwise.
:- Do not cut it into pieces.
Heat 4 tbsp of oil in a hard bottomed pan.
Fry the brinjals till it gets cooked completely.
Take brinjals from the fire, and keep it aside.
In the remaining oil, saute onions and garlic in the same pan.
Add coriander seeds, red chillies, turmeric powder and stir well till it gets brown in color.
Grind the mixture to a paste.
Add tamarind and water and salt to the paste and let it boil.
Add fried brinjals to boiling gravy and stir slowly for 5 - 10 mins.
Garnish Ennai Kathirikkai with coriander leaves.
:- Serve hot Ennai Kathirikkai with rice and chapathi.
