For preparing Tamil Nadu Pork Curry, first cut the pork into small pieces.
Apply turmeric powder and wash it thoroughly.
Add the ginger garlic paste with the meat and pressure cook for 5 to 6 whistles.
Grind together cinnamon, fennel seeds, ginger, garlic and mustard seeds.
Heat a little oil in a pan.
Add the ground paste and saute it.
Add the cooked pork, chilly powder and coriander powder.
Prepare thick tamarind juice and add it with the above.
Mix it well and cook till it becomes a thick gravy (should be cooked for more than 15 mins on a medium flame).
:- Serve Tamil Nadu Pork Curry with rice, idly or dosai.
:- Tastes good when taken the next day. As pork contains more fat, there is no need to add more oil.
