For preparing Kerala Easy Vegetable Biriyani, first take a pressure pan/cooker and add ghee/oil.
Add whole garam masala.
Add all the chopped vegetables, green chillies and garlic and saute for about 5 minutes.
Add coriander and mint leaves, turmeric powder and saute for another 2 minutes.
Add salt and 2 cups of water.
:- Since the rice already absorbed an equivalent of 1 cup water.
Allow it to boil.
When it starts to boil, add the drained rice and lemon juice.
Cover with the lid of pressure pan and put the weight on.
Cook on a very low flame for exactly 5 minutes.
Remove from flame and set aside.
Open the lid of the pan only after 15 minutes.
Garnish with fried onion, nuts, raisins and coriander leaves.
:- Serve hot with raita and pappadams.
