Heat 2 - 3 tsp of oil in a pan or a kadai.
Add the onions and chilly and fry well.
Add any veg masala remaining and stir well.
Once they are hot, add the eggs.
:- Make sure the heat is at high for 2 - 3 mins so that egg will cook faster and mix well with the veg.
Then reduce the heat to medium.
Add the methi leaves and stir it for 2 - 3 mins until they shrink.
Add in pepper and salt as per your need.
Finally top it with coriander leaves, curry leaves and lemon juice.
:- Serve hot with chappathi or bread /pita bread.
NB: You will not like to part this from your plate to anyone..i bet!!
