Kerala Vattayappam

Vattayapppam is a steamed rice cake dish usually served for breakfast or served as a tea-time snack. Rice and coconut are ground together and fermented with yeast. No oil is required in the preparation of Vattayappam. Popular in the Christian communities of Kerala, Vattayappam is gentle on stomach and hence regarded as a healthy traditional dish. The sight of the white, soft, round and slightly sweetened cake topped with raisins and cashew nuts is real tempting. The flavor of cardamom in Vattayappam plays havoc to your taste buds. Ingredients
  

  • 1 cup Raw rice
  • 1/2 cup Cooked rice
  • 1 cup Grated coconut
  • 1/4 tsp Instant yeast
  • Salt As reqd
  • Sugar As reqd
  • 1/4 - Water
  • 2 tbsp Raisins
  • 2 tbsp Cashewnuts
  • Cardamom A few, Elakka

Instructions
 

  • Soak the rice in water for approximately 6 hrs or overnight.
  • Grind the soaked rice with the cooked rice and coconut to make a smooth batter.
  • While grinding add enough water.
  • :- Make sure it is not too watery.
  • Add the yeast, salt and sugar.
  • Keep the batter to ferment overnight.
  • Spoon in the batter to a flat bottom greased pan till half full.
  • Top it with raisins, cashewnuts and cardamom.
  • Steam it for 15 - 20 mins on a medium flame till done.
  • Cut the vattayappam and serve.
  • :- Vattayappam is ideal as a teatime snack.
