North Indian Simple Tomato Rice

A variety rice cooked in tomato puree

Ingredients
  

  • 1/2 kg Basmati rice
  • 3/4 kg Tomato pureed
  • 4 nos Green chillies
  • 2 each Spices Cinnamon, Cloves, Cardamom
  • Salt As reqd
  • 2 nos Onion medium
  • 1 tbsp Ghee
  • 2 tbsp Oil
  • Ginger garlic paste - 1 tsp
  • Coriander leaves chopped
  • 2 tbsp Mint leaves chopped

Instructions
 

  • Wash and soak the basmati rice in water for 15 - 20 mins.
  • Slice the onion and green chillies.
  • Put the tomatoes in the boiling water. Close it for 5 mins, peel and grind it to a fine paste.
  • Heat ghee/oil in a pressure cooker.
  • Season spices.
  • Add chopped onion and fry till golden brown.
  • Add the green chillies and ginger-garlic paste and saute till the raw smell goes.
  • Add the chopped coriander and mint to it and fry for few secs.
  • Add rice and saute for a min.
  • Add the tomato puree in 1:1 1/2 cup ratio.
  • When it starts to boil, add salt and stir once.
  • Pressure cook for 1 whistle.
