North Indian Egg Vindaloo

Hard-boiled eggs in a spicy but tasty gravy

Ingredients
  

  • 4 - Hard boiled eggs
  • 2 nos Onion
  • 4 nos Dry red chilies Kollamulaku
  • 5 nos Garlic pods
  • 1 piece Ginger
  • ½ tsp Cumin seeds Jeerakam
  • 1 piece Cinnamon Karugapatta
  • 1 tsp Garam masala
  • Vinegar ¾ cup
  • 1 tbsp Sugar
  • tbsp Ghee
  • Salt As reqd

Instructions
 

  • Grind the red chillies, garlic, ginger and cumin seeds with a little vinegar and salt to taste.
  • Chop the onions and fry in ghee.
  • Add the ground paste and cinnamon to it.
  • Add sugar, vinegar and garam masala.
  • Shell the eggs, cut into halves, lengthwise and add to the curry.
  • Cook till the gravy thickens.
  • :- Serve with rice or rotis.
