Heat 1/2 tbsp of oil in a pan.
Fry Bengal gram, black gram, cinnamon, red chillies, coriander seeds, cardamom and 1 tsp of cumin seeds until they turn golden brown.
Switch off the stove and let this cool for a while.
After cooling, grind it into a fine powder and keep aside.
Cook rice with 6 cups of water.
Add ghee to that rice and cool it. Keep it aside.
Heat 1 1/2 tbsp of oil in a pan.
Splutter mustard seeds and the 1/2 tsp of cumin seeds.
Add the fried cashews and onions and saute until onions turn golden brown.
Add the chopped methi leaves and fry until it leaves the raw smell of the methi leaves and nice aroma comes.
Add ginger-garlic paste, salt and turmeric powder and saute for 1 more minute.
Finally add the spicy daal powder from step(2-4) and switch off the stove.
Mix it well with the rice.
