Instructions
Heat oil in a pan.
Splutter mustard seeds.
Add onion and saute till it becomes slight brown.
Add tomato, garlic and green chillies and saute for 5 mins.
Add coriander powder and saute for 1 min.
Add red chilly powder and fenugreek.
Add enough water (4 cups).
Add curry leaves, sugar and vinegar.
Add salt and boil it for 8 - 10 mins.
Add boiled eggs.
Boil the eggs in the curry for 2 mins.
:- Serves best with chappatis and appams and not with rice.
