Hot And Sweet Egg Curry

Ingredients
  

  • 4 nos Eggs boiled and each halved
  • 1/2 tbsp Mustard seeds
  • 3 tbsp Oil
  • 2 stems Curry leaves
  • 1/4 tsp Turmeric powder
  • 2 tbsp Coriander powder
  • 1 tbsp Red chilly powder
  • 3/4 tbsp Sugar
  • 1/2 tbsp Fenugreek Uluva
  • 1 no Onion chopped, big
  • 2 nos Tomato chopped
  • 2 nos Green chillies slit
  • 6 nos Garlic pods chopped
  • 1/2 tbsp Vinegar
  • Salt As reqd
  • 4 cups Water

Instructions
 

  • Heat oil in a pan.
  • Splutter mustard seeds.
  • Add onion and saute till it becomes slight brown.
  • Add tomato, garlic and green chillies and saute for 5 mins.
  • Add coriander powder and saute for 1 min.
  • Add red chilly powder and fenugreek.
  • Add enough water (4 cups).
  • Add curry leaves, sugar and vinegar.
  • Add salt and boil it for 8 - 10 mins.
  • Add boiled eggs.
  • Boil the eggs in the curry for 2 mins.
  • :- Serves best with chappatis and appams and not with rice.
