Heat oil in a pan.
Saute the finely chopped green chillies and a small portion of the chopped onions.
Beat the eggs well and add salt & pepper and the sauteed onions & chilli.
Spread some oil on a heated pan and pour the egg mixture to make an omelette.
Flip to cook both sides.
When both sides are cooked, remove from flame and cut into small square pieces.
Heat oil in a pan.
Add onions & saute.
Add ginger-garlic paste and saute till the onions become transparent.
Add turmeric powder, chilly powder, coriander powder and salt.
Mix well and fry for 30 seconds.
Add tomato slices and cook for 1 min.
Add tomato sauce & 1 1/2 cups of water and boil to make gravy.
:- Quantity of tomato sauce can be varied according to tanginess required.
Optionally, add coconut milk for a milder taste.
Add coriander leaves and remove from flame.
Add the omelette pieces into the gravy.
:- Serve hot.
