Vendakka Curry - Kerala Style

Vendakka Curry is a popular as well as delicious vegetable stew in Kerala cuisine. Cooked in coconut milk, Vendakka Curry is a mild and flavorful dish with a somewhat thick creamy gravy. The sliminess of ladies finger or okra is reduced by sautéing well in oil. Care should be taken so that the dish is not watery but thick. Vendakka Curry goes well with rice as well as chappatis. We have introduced a simplified and well illustrated Vendakka Curry that can be prepared easily when you are in a hurry. The sautéed ladies finger pieces are cooked in coconut milk until done. Enjoy the dish.

Ingredients
  

  • 500 gm Lady’s finger cut into 1” pieces, Vendakka
  • 2 nos Onion diced
  • 5 or Green chillies slit
  • Curry leaves A few
  • 1 cup Thick coconut milk
  • 2 cups Thin coconut milk
  • ¼ tsp Turmeric powder
  • 1 ½ Coriander powder
  • Coconut oil As reqd
  • Salt As reqd

Instructions
 

  • Heat oil in a pan or a kadai.
  • Add vendakka pieces and sautT, till you get rid of its¦ stickiness.
  • Add onion, green chillies and curry leaves and sautT again.
  • When the onion gets sautTed lightly, add turmeric powder and coriander powder.
  • Saute, till the raw smell of the powders leave.
  • Add thin coconut milk and mix well.
  • Cover and cook for 5 mins.
  • After 5 mins, remove the cover and stir well.
  • Add thick coconut milk and remove from the flame.
