Kerala Style Tomato Pickle

Easy to make tomato pickle

Ingredients
  

  • 1/2 kg Tomato
  • 1 tsp Garlic paste
  • 1 tsp Ginger paste
  • 1/4 tsp Turmeric powder
  • 2 tsp Chilly powder
  • 1/2 tsp Fennel seeds powder Perinjeerakam
  • 3 nos Green chillies
  • Curry leaves A few
  • 3 tbsp Coconut oil
  • Mustard seeds A little
  • 2 tbsp Vinegar

Instructions
 

  • Clean and cut tomatoes into fine pieces.
  • Mix with salt and keep it for half an hour.
  • Grind together chillies and curry leaves.
  • Heat coconut oil in a pan or a kadai.
  • Splutter mustard seeds.
  • Add ginger paste, garlic paste, fennel seeds powder and green chillies-curry leaves paste.
  • Stir for 2 mins.
  • Add chilly powder and turmeric powder. Stir well.
  • Add tomato.
  • Allow it to cook.
  • Add salt, if reqd.
  • Add vinegar.
  • Cook, until this becomes thick and gets a consistency of that of jam.
  • :- Serve with dosas or can be used as a side dish for rice.
