North Indian Style Paalak Paneer

Ingredients
  

  • 1 bunch Spinach fresh green ones
  • 10 - Paneer cubes
  • 1 no Tomato medium
  • 5 nos Green chillies
  • 1 no Onion chopped finely
  • Garlic ginger paste - 1 tsp
  • 1 tsp Coriander powder
  • 1 tsp Cumin powder Jeerakam
  • 1/4 tsp Turmeric powder
  • 50 gm Cashews
  • 1 tsp Ghee
  • 2 tsp Oil
  • Salt As reqd

Instructions
 

  • Wash the spinach well and cut them into big pieces.
  • SautT spinach and green chillies in 1 tsp of oil until they are wilted.
  • Allow it to cool and blend it into a smooth paste.
  • Boil tomato in hot water till the skin breaks down. Remove the skin and mash the tomato into a smooth paste.
  • Roast cashews lightly. Add a little water and blend it into a fine paste.
  • SautT paneer cubes in 1 tsp of ghee till they are golden brown.
  • Heat oil in a pan.
  • Saute onion and ginger-garlic paste, till the onion is translucent.
  • Add coriander powder, cumin powder and turmeric powder.
  • Add the spinach, tomato and cashew paste into it.
  • Add salt and mix well.
  • Cover and cook for 10 - 15 mins.
  • Finally, add the paneer cubes and cook for 2 - 3 mins.
