Olan Pumpkin Curry

A simple pumpkin curry served during Kerala Sadhya - Ramya V

Ingredients
  

  • 1/2 kg Pumpkin Mathanga
  • 1/2 cup Vanpayar Vellapayar
  • 2 or Green Chilly slit lengthwise
  • 1 inch Ginger cut into thin long pieces
  • 1 cup Water
  • 2 tbsp Coconut milk
  • 1 sprig Curry leaves
  • 1 tsp Coconut oil

Instructions
 

  • Cook vanpayar(vellapayar) with salt and keep aside.
  • Peel and cut pumpkin into flat 1 inch square pieces.
  • Boil the pumpkin pieces along with green chillies, ginger and salt.
  • Add the cooked vanpyar and boil for a while.
  • Once cooked, add coconut milk.
  • Garnish with curry leaves and coconut oil.
  • :- Serve hot.
  • :- It can even be served as a thick soup by smashing the pumpkin and adding extra water.
