For preparing Easy Kerala Cake, first beat the eggs using a handheld electric mixer into a large bowl.
Add sugar, oil and ghee and mix at the lowest speed again for a few mins.
Mix together maida, baking powder and salt.
Add this little by little to the bowl and mix at a medium speed for at least 15 mins.
Add essence, lemon juice and cardamom and mix for 1 more min.
Preheat oven to 350 degree F.
Pour the batter into a greased baking tray.
Garnish by putting cashews and raisins neatly over it.
Bake in oven for 40 - 45 mins(or till light brown).
Prick with a sharp knife and it should come out clean, if done.
Easy Kerala Cake is ready.
