Kerala Style Murukku

Kerala Style Murukku is a crunchy, crispy tea time snack very popular in South Indian Cuisine. Kerala Style Murukku is prepared from a mixture of black gram dal, rice flour and selective spices. This snack dish is unique and special with rice flour mixture pressed out through a ‘seva nazhi’ in desired shapes and deep fried in oil. Ingredients
  

  • 4 cups Rice flour Ari podi
  • 1 cup Black gram(Uzhunnu) Whole
  • 1 tbsp Cumin seeds Jeerakam
  • 1 tbsp Sesame seeds Ellu
  • Asafoetida A little, Kayam
  • 500 G Coconut oil
  • Salt As reqd

Instructions
 

  • For preparing Kerala Style Murukku, first heat the rice flour.
  • Heat the whole black gram, till it's light golden brown.
  • Cook black gram in 1 1/2 glass of water.
  • Allow it to cool and grind it in a mixer grinder to make it into a paste.
  • Mix together the above black gram paste, rice flour and salt along with cumin seeds, sesame seeds and asafoetida.
  • Add some water and knead this mixture well to make a dough.
  • Take a seva nazhi and put a portion of this mixture into it.
  • Press the handle to let the mixture come down in the shape of a murukku onto a plastic paper or a plantain leaf(vazha ela).
  • :- Do not forget to put the chillu inside the seva nazhi.
  • Heat oil in a kadai and allow it to boil.
  • Slowly, put these murukku into the oil and fry them.
  • :- Those who can use their fingers to shape the dough in the form of murukku can do so. However, it's much easier the other way.
  • Drain oil from Murukku.
  • Keep Kerala Style Murukku in an air tight container to retain the crispiness.
