Lime Rice

Sometimes it is the simple dishes that turn out the best. Lime Rice is one such dish. The fresh and lemony flavored rice speaks volumes and tastes great making you simply yearn for more. Any spicy side dish pairs well with Lime Rice. Lime Rice is unique and special with Bengal gram and peanuts adding a crunch to the citrus dish. Ingredients
  

  • 1 1/2 cup Cooked white Rice
  • 2 1/2 tbsp Lime juice
  • 1 tbsp Bengal gram Kadalaparippu
  • 2 tbsp Peanuts Nelakadala
  • Curry leaves Few
  • 2 nos Serrano chillies slit
  • 1 tsp Turmeric powder
  • 1 tsp Mustard seeds
  • Salt As reqd
  • 2 tbsp Oil or ghee

Instructions
 

  • For preparing Lime Rice, first heat oil or ghee in a pan.
  • Splutter mustard seeds and when they crackle, add slit serrano chillies. Stir in low flame till it emits a fragrance.
  • Add bengal gram, peanuts and curry leaves in quick succession. Allow the peanuts to be slightly browned.
  • Add turmeric powder and required salt. Stir in lime juice.
  • Add cooked white rice. Mix gently. Remove pan from fire. Let the vessel sit intact for a few minutes before serving.
  • Serve hot Lime Rice with pappad and pickle. You can add cashews for addtional taste.
