Ingredients
  

  • 4 cups Plain cooked rice
  • 4 nos Garlic pods chopped
  • 4 tbsp Veg oil
  • 1 cup Tofu sliced into strips
  • 1 no Onion sliced
  • 1 - Sweet potatoes or white potatoes diced
  • 1/4 lb Mushrooms sliced
  • 1 - Tomatoes chopped
  • 1 tsp Brown sugar
  • 3 tbsp Light soy sauce
  • 1/4 tsp Curry powder
  • 1/2 tbsp Turmeric powder
  • 1/4 tsp Pepper
  • 2 - Green onions sliced
  • 2 - Thai basil snipped

Instructions
 

  • Heat oil in a pan.
  • Fry the garlic in it until browned.
  • Add tofu and onions and fry 2-3 minutes.
  • Add the rice, mushrooms, potatoes, tomatoes, brown sugar and soy sauce and fry another 2-3 minutes.
  • Add the curry powder, turmeric, and pepper. Mix well.
  • Cut the green onions into pieces and sprinkle over the top, along with the snipped basil.
