Khus Khus Pulav

Rice and vegetables cooked with khus khus

Ingredients
  

  • 1 cup Basmati Rice
  • 1 cup Onion cut lengthwise
  • 1/2 cup Peas
  • 3/4 cup Beans chopped
  • 1/2 cup Carrot cut lengthwise
  • 2 tsp Ghee
  • 4 tbsp Oil
  • Coriander leaves
  • For masala paste:
  • 1/2 Onions
  • 3 tbsp Poppy seeds Khashakhasha
  • 3 nos Green chillies
  • 2 nos Cloves Grambu
  • 1" piece Cinnamon Karugapatta
  • Ginger A small piece
  • 2 nos Garlic pods
  • 2 nos Cardamom Elakka

Instructions
 

  • Wash and soak rice for 10 minutes. Drain water.
  • Fry the rice in a pan by adding 1 tsp of ghee for 5 minutes on a medium flame.
  • Grind together all the ingredients and prepare masala paste.
  • Heat oil in a pressure cooker.
  • Add onions and fry them well.
  • Mix ground masala paste and wait for the oil to separate.
  • Add all vegetables and fry for some more time till the raw smell goes.
  • Add 2 cups of water or enough water to cook rice and vegetables.
  • Add fried rice and salt and mix well.
  • Cover the lid and pressure cook for 10-12 minutes.
  • Pour little ghee on top.
  • Garnish with chopped mint leaves or coriander leaves.
