Capsicum Rice

Combination of rice with capsicum

Ingredients
  

  • 1 cup Basmati rice
  • 1 1/2 nos Capsicum
  • 1/2 of Onion
  • 1 tsp Lemon juice
  • Salt As reqd
  • Grated coconut As reqd
  • Coriander leaves for garnishing
  • For seasoning:
  • 4 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 1 tsp Bengal gram Kadalaparippu
  • 1 tsp Black gram Uzhunnuparippu
  • 1/2 tsp Turmeric powder
  • Cashews As reqd
  • 2 nos Cloves Grambu
  • 1" piece Cinnamon Karugapatta

Instructions
 

  • Cook the basmati rice and spread over a plate. Allow it to cool.Add little ghee to the rice so the grains will be separated.
  • Cut capsicums and onions lengthwise.
  • Heat oil in a pan.
  • Add all the ingredients for seasoning.
  • Add onions followed by capsicums and fry till it becomes tender.
  • Add salt and keep frying for another few minutes.
  • Add cooked rice to it along with lemon juice and mix well.
  • Finally, add grated coconut. Mix well.
  • Garnish with coriander leaves.
