Tamil Nadu Simple Lemon Rice

Ingredients
  

  • 1 cup Rice
  • 1 tsp Lemon or lemon juice
  • Salt As reqd
  • 1 tsp Sugar
  • 1/2 cup Onion(optional) chopped
  • 2 nos Green chillies
  • 1 tbsp Butter
  • For seasoning:
  • 3 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 1 tsp Black gram Uzhunnuparippu
  • 2 tsp Peanuts Nelakadala
  • Currry leaves A few
  • 1/2 tsp Turmeric powder
  • For garnishing:
  • Chopped coriander leaves
  • 4 tbsp Fresh Grated coconut

Instructions
 

  • Cook rice and allow it to cool completely. Separate the grains by mixing 1/2 tsp of ghee.
  • Take a cup and extract juice from lemon. Add a pinch of sugar and salt to it.
  • Heat oil in a pan.
  • Add the ingredients for seasoning followed by chopped onions and fry till golden brown.
  • Add slit green chillies and fry for another minute.
  • Add rice to it.
  • Add prepared lemon juice and butter and mix well.
  • Garnish with chopped coriander leaves and freshly grated coconut.
