Hakka Noodles

Ingredients
  

  • 4 packets Chow noodles
  • 2 nos Onion big
  • 2 nos Capsicum
  • 2 nos Carrot
  • 1 no Cabbage small
  • 10 - French beans
  • 3 - Red chillies
  • 1 tsp Garlic paste
  • 3 - Worcestershire sauce
  • 4 tbsp Vinegar
  • 6 tsp Chilly sauce
  • 6 tsp Soya sauce
  • 1 tsp Ajinomoto
  • ½ tsp Red chilly powder
  • ¼ tsp Sugar
  • 2 tsp Black pepper
  • 6 tbsp Oil
  • 3 tsp Salt
  • 2 tsp Corn flour

Instructions
 

  • For boiling noodles: 1)Take 6-7 cups of water in a patella and boil it.
  • When it starts boiling put noodles in it. Do not cover the vessel. Boil it for two three minutes.
  • Switch off the gas and strain it through a strainer.
  • Wash it with cold water for 5-7 times and simultaneously strain it. Keep it in strainer for 20 minutes.
  • When noodles become dry, put 4 tsp. of oil. Mix it and separate it with help of fingertips. Keep it again for 5-7 minutes.
  • For making Hakka noodles:
  • Mix chilly sauce, soya sauce, vinegar, salt, black pepper, ajinomoto, sugar and Worcestershire sauce in a bowl.
  • Mix corn-flour with water and make a paste. Keep it aside.
  • Heat oil in a pan or kadai. Add red chilly powder and dry whole red chilly followed by boiled noodles. Mix well and keep aside.
  • Heat 2 tbsp. of oil in a pan or kadai. Lower the flame and add garlic paste. Cook it for half a minute.
  • Add onions and fry them for one minute.
  • Add carrots and capsicum and fry it for 1 minute followed by French beans and cabbage and fry it for 2 minute.
  • Add aji-no-moto, black pepper and salt.
  • Next, add the prepared sauce and cook it for half a minute.
  • Add a cup of water and boil.
  • Put the corn flour paste while stirring it. When it becomes thick, turn off the gas.
  • For serving, spread fried Hakka noodles in a plate and place the hot vegetable on the fried noodles.
  • :- Serve Hakka noodles hot.
