Spring Rolls

Spicy spring rolls

Ingredients
  

For making rolls:

  • 1/2 cup Maida All purpose flour
  • 1 cup Milk
  • 1/4 tsp Salt
  • A pinch Soda bi-carb
  • Oil for deep frying

For stuffing:

  • 1 no Onion finely chopped
  • ½ Carrot cut into thin and long strips
  • 7-8 nos French beans half boiled
  • ½ cup Cabbage cut into thin and long strips
  • ½ cup Capsicum cut into thin and long strips
  • Ajinomoto A pinch
  • ½ tsp White Pepper
  • ½ tsp Sugar
  • Salt As reqd
  • 2 tsp Soya sauce
  • 1 tbsp Oil

Instructions
 

For Stuffing:

  • Cut the sides of the beans and put them in boiled and salted water. Keep it for one minute. Strain it through a strainer.
  • Cut it along with all the other vegetables into thin and long slices.
  • Heat oil in a pan or a kadai. Add chopped onions and saute for 1 minute.
  • Add sugar, ajinomoto, salt and white pepper. Add all the vegetables and cook for 1 minute. Add soya sauce and mix well.

For Making Spring Rolls:

  • Take the maida in a bowl. Add salt and milk along with soda-bi-carb to maida. Make a thin batter for preparing pancakes.
  • Heat a nonstick pan. Put a ladle full of the batter onto the pan and stir the pan so that the paste spreads evenly on the pan.
  • When the bottom of the pancake is cooked, remove from the pan and keep aside on a dry cloth. Don't cook the top portion of the pancake. Make the second pancake in the same way.
  • Put half the stuffing on the cooked side of each pancake. Fold both the sides onto the stuffing. Hold sides and turn upward.
  • Mix one tsp. of corn-flour in 1 tsp. of water. Cover the sides with the corn-flour paste.
  • Heat oil in a pan or kadai. Fry spring rolls on both the sides till it becomes golden brown. Place them on a tissue paper. Cut them into 1 inch pieces. :- Serve hot with Ketchup and Chilly Sauce.
