For preparing Fruit Pizza, first prepare the crust by mixing with hand, the butter, confectioners sugar and flour into a crumb-like batter. Do not melt butter.
Pat into 15" pizza pan and bake at 350F for 13-15 minutes until golden brown. Do not overbake.
For Filling and Glaze Preparation: With hand mixer, mix cream cheese, sugar and vanilla until smooth.
Spread the mixture over cooled crust.
Arrange fruit slices on top, so that the design will remain when cut into 12 wedges.
Mix apple juice, cornstarch, lemon juice and sugar together in a saucepan and cook over medium heat until clear and thick, stirring constantly.
Allow it to cool.
Spread on top of pizza after slicing.
