Carrot Kheer

Delicious and creamy textured Carrot Kheer is an apt and perfect dessert for special occasions and gatherings. We can adjust the flowing smooth consistency of kheer as per our requirements. Carrot Kheer is rich in beta carotene and nutrients. Cardamom grants a refreshing aroma and cashews aid to the nutty flavor of Carrot Kheer. For a rich and grand flavor, you can go for fat rich milk instead of skimmed ones. Carrot Kheer a favorite with kids as well as elders can be served hot or cold. Long, tender carrots are preferred for the dish.

Ingredients
  

  • 1 kg Carrots
  • 1 1/2 litres Milk
  • 1 kg Sugar
  • Cardamom powder As reqd, Elakka podi
  • Saffron A few
  • Roasted cashews As reqd

Instructions
 

  • Cut carrots into small pieces or grate them. Cook in a pressure cooker.
  • Add saffron and grind it well.
  • Heat this mixture over a very low flame.
  • Add sugar and stir continuously till the sugar dissolves in the mixture.
  • Add cardamom powder and mix well.
  • Next, add boiled milk to this mixture and heat in low flame. Cook till the required consistency is obtained. Remove from flame and cool the same.
  • Refrigerate Carrot Kheer for best results.
  • Roast some cashews and add to the kheer just before serving.
  • :-Serve cold.
