Cut the vegetable into small cubes and wash them thoroughly.
Add salt and water to it and cook them till the vegetable becomes tender.
Drain off the excess water and keep it separately.
Soak mustard seeds and rice for 15 mins and add red chillies to grind them into a paste by using little water.
Soak tamarind in water and keep it aside.
Heat oil in a pan and put all the ingredients of tempering.
Fry them for 2-3 mins and add the cooked vegetable to it.
Stir it for some time.
Add the mustard paste and tamarind juice to it and mix well.
Cover Bottle Gourd curry for about 5 mins.
Remove the Bottle Gourd curry from fire.
