Kaju Kathali

Kaju Kathali is a delicious sweet dish usually prepared and very popular during Diwali, pongal and other festive occasions. The diamond shaped Kaju Kathali is unique in its nutritive contents and outer appeal. Prepared from ground cashews, Kaju Kathali is a highly nutritious sweet very tempting to the last bite. Unlike burfi, Kaju Kathali has to be rolled out thin. Care has to be taken while rolling the Kathali so that the mixture doesn’t stick to the rolling pin. Ingredients
  

  • 500 g Cashewnuts
  • 300 g Sugar
  • 1 tbsp Ghee
  • 1/2 tsp Cardamom powder Elakka
  • Silver foil

Instructions
 

  • For preparing Kaju Kathali, first soak the cashews in water for around 4 hours.
  • Drain the cashews and grind them to a fine paste by using very little water.
  • Take a heavy saucepan and put sugar followed by the cashew paste.
  • Cook in slow to medium heat.
  • Cook stirring continuously till a soft lump is formed.
  • Add ghee and cardamom powder and mix well.
  • Spread the mixture on a clean greased work surface.
  • Roll lightly with a rolling pin, to 1/8" thickness.
  • Apply silver foil.
  • Allow it to cool.
  • Cut into diamond shaped katlis.
  • Delicious Kaju Kathali is ready.
