Tamarind Rice (Puliyodharai)

Tamarind Rice termed ‘Puliyodharai’ in Tamil language is a popular South Indian dish, very delicious and healthy. The flavor and aroma of Tamarind Rice is tempting and irresistible. Ingredients
  

  • 400 gm Rice
  • Salt As reqd
  • 50 gm Tamarind Puli
  • 200 ml Water
  • 50 gm Black gram Uzhunnuparippu
  • 50 gm Bengal gram Kadalaparippu
  • 20 gm Dried red chillies
  • 150 ml Oil
  • 1 tsp Asafoetida Kaayam
  • Mustard seeds A pinch
  • Black peppercorns A few
  • Turmeric powder A pinch
  • 1 no Green chilly
  • Ginger julienned
  • Curry leaves chopped

Instructions
 

  • For preparing Tamarind Rice or Puliyodharai, first cook rice with required salt till just done and cool.
  • Soak tamarind in 200 ml water and extract the pulp.
  • Roast black gram, chana dal and red chillies separately and grind to a coarse powder.
  • Heat oil.
  • Add asafoetida, mustard seeds, peppercorns, turmeric powder, green chillies, ginger and curry leaves.
  • When the mustard seeds crackle, add tamarind pulp, powdered masala and salt to taste.
  • Cook till all the water evaporates and the mixture thickens.
  • Add the tamarind masala to the rice and mix well till the rice is well coated with the masala.
  • Garnish Tamarind Rice (Puliyodharai) with fried cashew nuts or groundnuts.
  • Cover and serve Tamarind Rice(PULIYODHARAI) hot.
  • :- Tamarind Rice(PULIYODHARAI) is ready.
