Pluck the Mansa leaf and wash thoughroughly under running water.Then pour boiling water into the leaves and keep it for 10 minutes. Chop the leaf into small bits.
Break the eggs into a container and beat well.
Heat oil in a non-stick pan and add chopped onion and tomato. Stir until onions are lightly browned and add chopped Mansa leaf. Stir well.
Now it's time to pour the beaten eggs.
Scramble the egg mixture and cook in low flame. Mexican Scrambled Eggs with Chaya is ready.
