Scrambled Eggs with Chaya | Mexican Food

Chaya mansa is a very popular green leafy shrub from Mexico. This shrub is medicinal and it is considered as the best leafy vegetable.Chaya is also a great source of calcium, magnesium, iron, proteins, and antioxidants.Since it has a certain amount of toxicity when raw, it is preferred to be consumed cooked.

Ingredients
  

  • 4 nos. Chaya mansa leaf
  • 2 nos. Egg
  • 2 tbsp Onion chopped
  • 1 tbsp Tomato chopped
  • 1 tbsp oil
  • Salt as required

Instructions
 

  • Pluck the leaf and wash thoroughly under running water.Then pour boiling water into the leaves and keep it for 10 minutes.Drain the leaves and chop it.
  • Beat two eggs by adding a pinch of salt.keep it aside.
  • Heat oil in a pan and add chopped onion and saute for 2 minutes.Then add chopped tomato and chaya mansa leaves.saute for 6-7 minutes in low to medium flame.
  • Now pour the egg mixture.
  • Scrambled egg with the help of a spoon.saute for 1-2 minutes and remove it from the flame.
  • Scrambled egg with chaya is ready now.
