Eggplant Chutney
Eggplant chutney is a spicy and tangy chutney, eggplant/ brinjal blended with ginger, garlic, tomatoes, green chilies and tamarind. It is usually accompanied with rice or phulka.

1 large Eggplant 5 Red chili 4 pods Garlic ½ piece Tamarind ¼ cup Coconut Salt as per taste Oil coconut/ gingelly oil – 2 tsp
In eggplant apply oil and burn it low flame . burn all side well (refer pic)
Allow to cool and peel the skin
Now in pan add red chili and garlic and tamarind roast well
Now add mustard seed and turn off before it crack
Now add coconut and mix well and allow too cool
Now in blender add red chili, tamarind and garlic and grind coarsely
Now add coconut and mustard blend roughly
Now add eggplant and blend one mix well transfer to bowl
Eggplant Chutney is ready to serve. Top oil before serving.
