Namkeen Seviyan

Namkeen is a Hindi word means Savory, and Sewai are vermicelli. This is a very healthy low calorie breakfast. It is easily digestible.

Ingredients
  

  • cup seviyan/whole wheat vermicelli
  • cup water
  • 1 medium onion, finely sliced
  • 8-10 nos curry leaves/curry patta
  • ½ tsp mustard seeds/rye
  • 1 tsp urad dal
  • 2-3 green chilies, sliced or finely chopped
  • ½” pc ginger finely chopped
  • ½ tsp sugar
  • 2 tbsp grated coconut
  • 2 tbsp oil or ghee
  • Salt

Instructions
 

  • In a pan dry roast the vermicelli till light brown in color. If you are using vermicelli that has already been roasted, then there is no need for roasting. Keep the vermicelli aside.
  • Finely slice the onion, green chili, ginger and coriander leaves.
  • In the same pan/kadai heat oil or ghee and add the mustard seeds and let them pop in the oil.
  • Now add the urad dal and when they turn golden brown in color add the onions, curry leaves, ginger, green chili and sauté till they become translucent.
  • Add the roasted vermicelli, salt and sugar and mix well.
  • Add water, lower the flame and cover the pan and cook for 10-12 minutes or till all the water has been absorbed.
  • Add the grated coconut and mix well.
  • Garnish with freshly chopped coriander leaves.
