For preparing Mutton Head Gravy, heat oil in a pan and saute small onion and tomato.
Grind the shallots and tomato to make a fine paste
In another pan, heat the oil and temper mustard seeds and curry leaves.
Add chopped onion and saute it.
Add ginger garlic paste and mix well until the raw smell goes out.
Add salt, turmeric, red chilli powder, curry masala and mix well
Add mutton head / thala and mix well until the masala blends well with the mutton head. Cook for 5 mins.
Now add onion tomato paste and mix it and cook for 5 mins.
Now add enough water for gravy and mix it. Close the pan with lid and allow to boil until the head gets boiled.
Meanwhile grind the coconut, fried gram and poppy seeds and make a fine paste.
Add the coconut paste to the gravy, mix well and close the pan with lid and allow to boil for 10 mins.
Now mutton head/thala gravy is ready to serve, serve with hot rice.
