Aracha Vitta Sambhar
Arachu Vitta means grinding the roasted spices to masala powder. The speciality of this recipe , is the addition of freshly ground masala to the sambar, instead of using sambhar powder.

2 no Drum stick 1/2 cup Toor dal 15 nos Shallots 1 Tomato Curry leaves little Jaggery little Tamarind small ball 2 tsp Oil 1/4 tsp Mustard 1/4 tsp Fenugreek 1/4 tsp Cumin Roast and Grind: 1 tblsp Coriander seed 1 tsp Urad and channa dal 4 Dry chili 1/2 tsp Asafeotida 1/2 tsp Cumin 1/4 tsp Fenugreek 2 tblsp Coconut 1/4 tsp Mustard 1 tsp Oil
Now roast all the ingredients listed under roast and grind. Allow it to cool.
Now grind it as a powder
Boil drum stick and keep aside
In a pan add oil and temper mustard , cumin and fenugreek
Now add shallots and tomato and cook well
Now add drum stick and boiled toor dal
Add Grounded powder, salt and mix well without lumps. cook till the raw smell goes
Now add tamarind water and jaggery cook.
Now turn off and serve with rice , dosa and idly . Arach Vitta Sambhar ready
