Rajma Brinjal Curry
this recipe is nice goes to rice and idly dosa. this yummy and delicious.

- 1 cup Rajma
- 15 nos Shallots
- 1 Tomato
- 1 cup Tamarind water
- 4 Brinjal
- 5 nos Garlic
- 1/4 cup Coconut
- Curry leaves small
- 2 tsp Sambhar powder
- Salt to taste
- 1/4 tsp Turmeric
- 1 tsp Jeera
- 1/4 tsp Mustard
- 1/4 tsp Fenugreek
- 3 tsp Oil
Soak rajma for 3 hour and cook soft and keep aside
In grinder add coconut and onions 2. tomato and jeera 1/2 tsp smooth paste.
Chop Shallots and garlic and brinjal
In pan add oil and temper mustard and fenugreek and jeera
Add onions and garlic and curry leaves and saute well
Add brinjal and sambhar powder and salt and cook for few mins
Add boiled rajma and tamarind water and mix well and brings to boil
Add coconut paste and boil for few mins and turn off
Garnish with coriander. Rajma brinjal curry is ready
