Healthy Spinach Soup

Ingredients
  

  • Finely chopped spinach : 2 bunches
  • Olive oil : 1 tsp
  • Finely chopped large onion : 1 no
  • 3 cloves Minced garlic : 2
  • Maggi vegetable stock cubes : 2 pkt
  • Water : 1 cup
  • Sugar : ½ tsp
  • Salt : to taste
  • Freshly ground black pepper : few

Instructions
 

  • Heat olive oil in a heavy bottomed pan.
  • Add the minced garlic and sauté for one minute. Add the finely chopped onions and fry till onions are pink in color.
  • Add the chopped spinach, salt and sugar.
  • Cook in the pan without the lid for 4 - 5 minutes till the spinach has wilted.
  • Boil 1 cup water and add the maggi stock cubes to make a stock. Add the stock to the cooked spinach.
  • When the spinach mixture has cooled down, grind it in a food processor or mixer to make a smooth puree.
  • Sieve the puree through a strainer and bring to a boil before serving.
  • Garnish with freshly ground black pepper and fresh cream (optional).
