Thai Seafood Soup

Ingredients
  

  • Mixed seafood : 1 cup (shrimps, fresh mussels, crab, small fish fillets, calamari etc.)
  • Mixed vegetables : ½ cup (optional)(chopped)
  • Coconut milk : ¾ cup
  • Vegetable stock : 2 cups
  • Lemon grass : 3 sticks
  • Onion : 1 no
  • Ginger : 1 piece

Instructions
 

  • In a sauce pan, add vegetable stock or water.
  • Add lemon grass(slightly crush the lemon grass to get the flavor well), ginger, onion, green chillies and bay leaves.
  • Allow it to boil and make it less in to a 1 cup.4) Remove from fire and strain it.5) Boil again the stock, add the seafood, fish sauce, pepper, soya sauce, vinegar and cook the mixed seafood.:- Do not over cook seafood as it will become harder.6) Add the coconut milk and just give a boil.
  • Add the corn starch and beaten egg and thicken it.8) Serve hot.
