For preparing simple egg curry, heat oil in a pan.
Saute the chopped onions till it becomes golden brown in colour.
Add the ginger-garlic paste, curry leaves, green chillies and tomatoes. Fry well.
Then add red chilly powder, coriander powder, turmeric powder, garam masala and salt.
Pour a little water and allow it to bubble.
When it starts to boil, add in hard boiled eggs.
Garnish with coriander leaves and remove it from the flame.
Simple egg curry is ready. Serve hot with paratha, dosa, idlis, ect.
