Easy Tomato Rice

  • 1 cup Basmati rice
  • 1 no Onion finely sliced
  • 2 cups Tomatoes blended
  • 1/2 tsp Chilly powder
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Mustard seeds
  • 1 spring Curry leaves
  • 2 springs Coriander leaves chopped
  • 4 nos Cloves
  • 1 inch Cinnamon broken, Karugapatta
  • 4 tbsp Cashew nuts
  • 4 tbsp Raisins
  • 1 cup Water
  • Ghee As reqd
  • Salt As reqd


  • For preparing easy tomato rice, heat ghee in a vessel, roast the cashew nuts and raisins separately. Remove from the flame and keep it aside.
  • In the same ghee splutter mustard seeds.
  • Toss in the cloves and cinnamon. Saute it for 1 minute on low flame.
  • Saute in the onions till it becomes transparent.
  • Sprinkle in turmeric powder, chilly powder and salt.
  • Pour in the tomato paste and sautT it for 2 minutes.
  • Then pour in the water and allow it to boil.
  • Once the water boils toss in the basmati rice and allow it to cook on low flame till done.
  • Lastly, garnish with coriander leaves, fried cashew nuts and raisins.
  • Easy tomato rice is ready. Serve hot with chicken curry.
